Lynn’s American Style Pancakes

Lynn’s American Style Pancakes200g S.R. flour3g (1/2 tsp) bicarbonate of soda35g caster sugar200ml buttermilk (or 200ml milk plus 1tblsp fresh lemon/lime juice stirred in.  Makes it yoghurty)1 large egg, separated

 

Whisk the egg white until it forms soft peaks. Set aside.Put flour, sugar and bicarbonate of soda in a bowl and mix.  Add the egg yolk and the buttermilk.  Stir the wet ingredients into the dry.  It should be quite thick.  Fold the beaten egg white into the mixture.Place a spoonful of batter into a heated & lightly oiled frying pan.  Leave some room as the pancakes do spread a little. Cook for a couple of minutes over a medium high heat.  When the little bubbles pop on the surface, flip the pancake over and cook for a further minute.
