1 pint of uncooked red lentils
2 pints of water
4 large onions
1 tin of tomatoes
1 heaped teaspoon of tumeric
3 heaped teaspoons of cumin
3 heaped teaspoons of coriander
6 heaped teaspoons of garam masala or even madras powder.
I soak the red lentils whilst i prepare the rest of the ingredients. Peel and chop the onions and garlic finely (i use a food processor). heat all the spices in a frying pan for a few minutes to release the flavour, I then added a couple of tablespoons of coconut oil to the spices and turned the heat off. In a large pan heat some oil (i use olive oil) and fry the onions and garlic for about 5 mins and then add the spice and the tinned tomatoes. Simmer for a little while before adding the lentils and 2 pints of water. Simmer on medium until the lentils breakdown and start sticking to the bottom. Add the chilli flakes as required.
This makes a large batch which I portion and freeze.
